About the Author

An accomplished Master Chef and Restaurateur, Gerard A. Pollion is a graduate of the prestigious French Culinary Institute in Paris, where he became the youngest winner of the French national Maitre D' competition. He opened his first restaurant at 24, receiving a "Top 50 Restaurants" award and three-star rating within just two years. This led to the opening of a second restaurant, which was, for twelve years, equally successful. After selling his restaurants and coming to the United States, Pollion continued his successful career by sharing vast knowledge of hosting as general manager of an exclusive Caribbean resort, and as restaurant manager of a four-star restaurant in South Florida. He was also director of product development for a seafood company. Today, he consults for restaurants and writes. This is his second book about the restaurant industry.
